Default is air-fryer panko tilapia with oven veg β choose a lens to adapt it.
Tap one of the buttons above to optimize this recipe for your needs: Ease swaps to an all-oven sheet-pan method so there's only one pan to wash, Time leans into the air fryer's speed and uses frozen peas straight from the bag, Flavor thickens the crust, adds a broil finish, and finishes the veg with browned butter and lemon zest, Cost keeps the already-cheap tilapia and trims the Parmesan and butter, and Health lightens the crust fat and loads up on veg. The ingredients, the steps, and the numbers up top all change with your pick.
Health Β· what changes
Lighter crust, more veg β the fish still delivers
Skip the butter entirely in the crust mix and reduce the olive oil to 1 tsp β panko still browns well in the air fryer without it. Cut the Parmesan in half or skip it. Load the vegetable side: double the carrots, use a full 1Β½ cups peas, and finish with lemon juice instead of butter. You land at ~360 kcal with 32g protein and noticeably less saturated fat.
Time Β· what changes
The air fryer is already fast β lean into it
The default air-fryer method is your fastest path. To shave a few more minutes: use pre-cut carrot coins from the bag instead of slicing your own, throw frozen peas directly onto the carrot pan in the last 4 minutes (no thawing needed β ever), and mix the crust ingredients in the same bowl you measured them into. Total is under 20 minutes if your fillets were thawed overnight.
Ease Β· what changes
Everything in the oven β one pan, easy cleanup
This is the old Option B method, promoted to a full lens. Preheat to 425Β°F and start the carrots on a foil-lined sheet pan for 14 minutes. While they roast, mix the crust and coat the fish. Slide the crusted fillets onto the empty side of the same pan and bake 16β18 more minutes. Add frozen peas in the last 4 minutes. One pan, one liner, and you're done. The crust won't be quite as shatteringly crisp as air-fried, but it's genuinely golden and delicious with zero extra dishes.
Flavor Β· what changes
Thicker crust, broil finish, browned butter on the veg
Double the Parmesan in the crust mix and press it on firmly β more cheese = more browning. Air fry as normal, then switch to broil for the last 1β2 minutes to get the crust deeply golden and slightly caramelized. Add extra lemon zest to the crust mix and fresh herbs (parsley or dill) at plating. For the veg: after tossing with garlic, cook the butter in a small skillet until it smells nutty and turns golden, then pour it over the carrots and peas. Worth every extra minute.
Cost Β· what changes
Tilapia is already the budget fish β trim the extras
Tilapia is one of the cheapest proteins at $3β5 per serving, so cost savings come from the extras. Halve the Parmesan (or use plain breadcrumbs entirely), skip the butter in the crust and use just 1 tsp olive oil, and use frozen carrots instead of fresh β frozen bagged carrots and peas cost under $1 combined. You keep the same satisfying crust and a complete, balanced plate for about $3 per serving.

Before you start
The default uses an air fryer for the fish and a sheet pan in the oven for the carrots β both run at once, and timing them together is the only thing to think about. Two things make or break the crust. First, thaw the tilapia fully before it goes in: place sealed fillets in a bowl of cold water for 20β30 minutes β never warm water, which cooks the outside unevenly. Second, pat the fillets bone-dry with paper towels once thawed. Wet fish = crust that steams off instead of crisping. Tilapia is done at 145Β°F β it's a forgiving fish and goes from done to rubbery if you push much past that. The crust firms slightly as it rests, so let it sit 2 minutes before you cut into it.
How to Make It
1Preheat oven + start the carrotsPreheat oven + start the carrots β one-pan method~2 min + 18 min roast
Preheat your oven to 425Β°F. Toss the carrot slices with a drizzle of olive oil, salt, and pepper. Spread on a foil-lined sheet pan in a single layer and slide into the oven. Set a timer for 18 minutes β you'll add peas near the end and the fish finishes in the air fryer while the carrots roast. Starting the carrots first is the key to everything finishing at the same time.
↻ Adapted Β· Ease Β· ~2 min + 14 min roast
Preheat to 425Β°F. Toss carrot slices with olive oil, salt, and pepper and spread on ONE side of a foil-lined sheet pan. Roast for 14 minutes β you'll add the crusted fish to the other side after that. Everything finishes on the same pan.
14 min head-start for the carrots so fish and veg finish together on one pan.
Health tip
A little oil goes far
A light toss with Β½ tsp oil is enough β the carrots roast fine and you skip unnecessary fat.
Time tip
Pre-cut bags save 3β4 minutes
Pre-sliced carrot coins go straight from the bag to the pan β no peeling, no cutting board.
Flavor tip
400Β°F for the carrots gives better caramelization
Dial back to 400Β°F instead of 425Β°F β slower roast with more color and sweetness. The air fryer still handles the fish at 390Β°F as normal.
Cost tip
Frozen carrots go straight on
Spread frozen sliced carrots from the bag directly on the foil β no prep and they roast perfectly.
2Mix the crust~2 min
In a small bowl, combine the panko, grated Parmesan, paprika, garlic powder, thyme, lemon zest, salt, and pepper. Give it a stir to mix evenly β you want the spices distributed through the crumbs, not sitting in clumps.
Health tip
Less fat, same crunch
Skip the Parmesan entirely or use 1 tbsp β the panko browns in the air fryer's circulating heat without it.
Time tip
Measure into the same bowl
Mix directly in the bowl you measured into β one less thing to wash.
Flavor tip
Extra Parmesan and zest here
Use 3 tbsp Parmesan and zest of a full lemon in the crust mix. The extra cheese browns deeper, the extra zest pops through the crust.
Cost tip
Plain breadcrumbs work
Swap panko for plain breadcrumbs and halve the Parmesan β the texture is slightly less shaggy but the crust still crisps up fine.
3Coat the fish~3 min
Pat the thawed tilapia fillets completely dry one more time β even a little surface moisture will steam the crust off. Brush the top side of each fillet with the olive oil and melted butter mixture. Press a generous layer of the panko-Parmesan mixture firmly onto each top β press it down so it adheres. Don't crust the underside.
Health tip
Dry fish is non-negotiable here
With less fat in the crust, the fish being dry matters even more. One good firm press and the panko holds.
Time tip
One firm press is enough
Press the crust on and move on β over-working it packs it too tight and it can fall off.
Ease tip
Crust the fish while carrots roast
Do this during the carrot head-start so you're ready to add the fish the moment the timer goes off.
Flavor tip
Press firmly and let it sit a minute
After pressing the crust on, let the fillets rest 60 seconds β the moisture from the oil slightly hydrates the crumbs and the crust adheres better before it hits heat.
Cost tip
1 tsp oil is enough glue
With just oil (no butter), you may need to press the crust on a little more firmly. It will still crisp.
4Air fry β 390Β°F Β· 10β12 minAdd crusted fish to the sheet pan β 425Β°F Β· 16β18 min10β12 min
Lightly oil the air fryer basket so the fish doesn't stick. Place fillets crust-side up in a single layer β don't overlap or stack them. Air fry at 390Β°F for 10β12 minutes. The fish is done when the crust is deep golden brown and the flesh reads 145Β°F on a thermometer, or flakes easily when pressed with a fork. Let it rest 2 minutes before plating β the crust firms as it cools.
↻ Adapted Β· Ease Β· 16β18 min
When the carrots have roasted 14 minutes, pull the pan and slide the crusted tilapia fillets onto the empty side. Return to the oven for 16β18 more minutes until the crust is golden and the fish hits 145Β°F. Everything cooks on one pan from here.
No air fryer needed β one pan does it all.
Health tip
Check at 10 minutes
Tilapia is thin and hits 145Β°F fast. Check early β there's nothing to save if it goes rubbery.
Time tip
The air fryer IS the time savings
10β12 minutes beats 16β18 minutes in the oven every time. Start it as soon as the carrots are in.
Flavor tip
Broil for the last 1β2 minutes
When the timer hits, switch the air fryer to broil (or pull the basket and transfer to a sheet pan under the oven broiler) for 1β2 minutes. Gets the crust darker and crispier β watch it closely, it moves fast.
Cost tip
Same steps, thinner wallet
Nothing changes here if you swapped the fish extras β just cook the same way and trust the cheaper crust still browns.
5Add peas to the carrots β last 4 min4 min
When the carrots have about 4 minutes left, scatter the frozen peas directly over the pan β no thawing needed. Return to the oven. When everything is done, push the vegetables to one side, add the butter, minced garlic, and lemon juice straight onto the hot pan, and toss everything together. The residual heat melts the butter and blooms the garlic in about 30 seconds.
Health tip
Skip the butter, use lemon juice
Squeeze lemon juice over the hot veg and toss β it brightens the carrots and peas without added fat. A pinch of salt finishes it.
Time tip
Frozen peas need zero prep
They go straight from the freezer bag onto the pan. This is the step β there is nothing to do.
Flavor tip
Browned butter changes the dish
Instead of plain butter, melt 1Β½ tbsp in a small skillet over medium heat and cook until golden and nutty-smelling, about 2β3 minutes. Pour over the hot veg with the garlic. The flavor difference is significant.
Cost tip
Half the butter still works
Β½ tbsp butter in the pan with garlic and lemon is enough to flavor the veg β you get the same savory finish for less.
6Plate and finish
Plate the tilapia crust-side up β never flip it face-down or the crust breaks. Spoon the carrots and peas alongside. Squeeze a lemon wedge over the fish right before serving. Tilapia is mild and the crust carries most of the flavor, so a good squeeze of lemon at the end is important.
Health tip
Lemon does the heavy lifting
Skip any sauce or extra fat β a generous squeeze of lemon over the fish and veg is genuinely all it needs.
Time tip
Serve straight from the pan
Slide the fish from the basket to the plate in one move β crust-side stays intact and there is nothing extra to do.
Ease tip
One pan comes to the table
If you used the all-oven method, you can serve directly from the sheet pan lined with foil β nothing to wash.
Flavor tip
Fresh herbs and zest at plating
Scatter fresh parsley or dill over the fish and veg right before serving. A few more shreds of lemon zest over the crust make the presentation noticeably brighter.
Cost tip
Half a lemon per serving is your only garnish
Let the seasoned crust speak for itself β no extra garnish needed.
